Oven Roasted Vegetables


About once a week I roast a big batch of vegetables in the oven. The selection varies from week to week, depending on what's on sale, what I have on hand, and what I'm hungry for. This week it was green beans, red onion, red pepper, carrots and mushrooms. The vegetables are chunked up into similar sized pieces, doused with a couple of tablespoons of olive oil, and seasoned liberally with whatever spices I'm in the mood for. This week it was herbs de provence, salt and pepper. I covered two cookie sheets with Reynolds Release foil and distributed the vegetables between them. The oven was preheated to 425 degrees and I roasted them for 30 minutes, stirring them and rotating cookie sheets about half way through. I then tossed them with a tablespoon or two of balsamic vinegar and the end result was a delicious, caramelized treat with a tiny vinegary tang to offset the distinctive sweetness that oven-roasting imparts. So good!




I then like to use the leftovers later in the week to make pizza. A whole wheat pizza crust (Boboli) is topped with pizza sauce, cheese, chopped leftover vegetables, and diced turkey pepperoni, then baked in a preheated 425 degree oven for 12-15 minutes.

One of things I had hoped to accomplish on the internet was for Lynn to demonstrate how easy it is too make doughs, especially pizza doughs. With a webcam we can now make movies, then upload them to Youtube. Both Lynn and I revolt at the taste of store bought processed doughs,(after taste*). I bought her a the kick a__ powerfull KitchenAid mixer a few years ago, she really appreciated it,as she had always done the kneading by hand(great way to tone up the arms, lol) but she told me never give such items on birthdays or Xmas! lol. Women!

* I thought as people age their senses decline, not so with us,lol, finicky would be the word.

I'll admit I'm jealous of people like Lynn, the ones who possess the talent to make dough. I've tried numerous times to make homemade pizza crusts, bread, cinnamon rolls and the like, and I always end up with hockey pucks. I did purchase some yeast last week, so evidently it must be time once again to prove that I'm a failure in that department...lol

Your comment has inspired me to actually produce this video. Let's see, put the web cam on a tripod, laptop computer on or near the countertop, and wala. Lynn uses no measuring devices at all, it's done by sight and feel. I think seeing it "Happen Live" might just be of help for you and for some of her online friends too. I know she has taught her real life friends in the past. I also know the finished dough can be frozen ,so as to have it readily on hand for future pizzas.

If you're not sparking an idea for a blog , you've get me thinking in some direction!

If you can finagle Lynn into posting a dough-making video, I'll belly up and promise to try to duplicate her recipe and technique. deal?

deal! Hopefully you bought "active dry yeast" and always check the expiration dates. Reading my typo(missing word laced)comment is now confusing to me! lol. Some blogs such as yours give me ideas for new blog topics.
