Psst... hey all you guys out there. Gather up the kids and help them make these for Mom on Mother's Day. They're a cinch to make and will look so cute on that breakfast tray when you serve her in bed. And get this, when they're made according to the recipe's directions, they only have 132 calories apiece! That means she'll love that you're also thinking of her youthful girlie figure as you and the kids are preparing this delightful little treat for her. Everybody wins (if you know what I mean.)
This recipe came from a magazine advertisement for Cabot cheese. I tweaked it a bit by adding in some sauteed onions, red peppers, and mushrooms, but you should in no way feel obligated to do so. In fact, it would eliminate a few extra dishes for Mom to wash if you just skipped that part.
Ham, Cheese-N-Egg Cups
12 (1-ounce) slices ham (choose thick slices of ham with small diameter instead of thin slices with larger diameter)
3 (1 ounce) slices 100% whole wheat bread (or whatever bread you like) each torn into 4 pieces.
1 1/2 cups egg substitute (like EggBeaters)
3 cups grated Cabot 50% reduced fat cheddar cheese (heck, you could even use Velveeta)
1/4 tsp pepper, or to taste
2 Tablespoons chopped fresh chives, for garnish (I used green onions and you could probably skip this step all together... it's just for the purdiness factor)
Preheat oven to 400 degrees. Lightly coat 12-cup muffin tin with cooking spray.
Gently fit one ham slice into each cup (edges will stick up.) Add some of the bread pieces in center of each, then pour egg substitute on top. Sprinkle with cheese, then with pepper.
Bake for 15 minutes, or until set. Remove from muffin tin, sprinkle with chives and serve.
Notes: I only made these because I had some leftover ham slices and I thought they looked so cute. But hubby oohed and ahhed over the taste, so it's looking like I'll actually be making these again!
