Bacon, Sauerkraut and Mashed Potato Cakes

I was so excited about this recipe that I started making mashed potatoes at 8:00 this morning, just so I could have leftover mashed potatoes. That's just nine shades of wrong, I don't care who you are. But that's how I get when I have an idea for a new recipe. My ERD (Excessive Repulsive Disorder) kicks in. It's similar to OCD, but I make it look cute.

Anyway, in the true spirit of doubting myself, and before I got totally carried away with this recipe, I did Google "sauerkraut and mashed potato cakes" just to prove that I wasn't totally insane. Evidently, at least one other person out there thinks that this combination has merit.

I have not always enjoyed sauerkraut. In fact, as a kid, I couldn't stand it. So when it was put on my dinner plate, I used to mix it up with my mashed potatoes just so I could choke it down. Over the years, I somehow came to enjoy it this way, and it is now one of those unlikely comfort foods to me. How does that saying go? If you lead a horse to water often enough, she'll order sauerkraut? Something like that.

We have to address the bacon thingie here. Ahh bacon... be still my heart! (but not in the literal sense, right?) So I used turkey bacon instead of regular bacon in this recipe, but if you're feeling naughty, use the real thing. And, if you're feeling really naughty, fry the cakes in the bacon grease. And don't even try to act like you weren't thinking about it already.

Sauerkraut And Mashed Potato Cakes

2 cups mashed potatoes (this works best if they're cold and relatively stiff instead of fluffy)
1 1/2 cups sauerkraut, drained and squeezed dry
1 egg, lightly beaten
1/4 cup all purpose flour
1/2 tsp garlic powder
2 Tbsp green onions, just the green parts, finely chopped
3 strips turkey bacon, cooked crisp, then crumbled
salt and pepper to taste (take it easy on the salt.. the sauerkraut and bacon are very salty already)
1 1/2 cups Panko breadcrumbs
2-3 Tbsp olive oil

Combine potatoes, sauerkraut, egg, flour, garlic powder, onions, bacon, salt and pepper.

Place Panko in a shallow dish. Heat oil over medium heat in large skillet.

Shape potato mixture into about 3" diameter cakes. Coat both sides with Panko and place in skillet. Fry until browned, about 5 minutes, then flip over and brown the other side. Make sure you're not frying with too high of heat or they'll brown too quickly and the flour will still have that raw taste. Remove to paper towel to drain.

This recipe will yield about six 3" potato cakes.

*TESTIMONIAL* ... My daughter Molly really, really hates sauerkraut (yeah, I know, the cabbage doesn't fall far from the tree) but she did like these. Trust me, you really can't detect the sauerkraut. It just gives the potatoes another layer of flavor. And this is another great way to add in a vegetable that the kids might not otherwise eat.

Ok this sounds awesome to me. I have been a sauerkraut lover all my life and a mashed potato fan too.
I'm going to have to try this when I find time and if you don't stop doubting yourself after all the goodies you come up with I'm going to come over there and............................

You had me at Mashed Potato Cakes. But then to add bacon and sauerkraut, well that got the German part of my blood rushing through my veins. Serve it up with some broiled sausage and I'll be a happy camper.

Just made 6 cakes and im wondering if you should put them in the fridge for a while to set?

anonymous: They would be OK to set in the fridge, but not necessary. Hope this helps!
