Y' all know that Marie Antoinette really didn't say, "Let them eat cake!" Ohhh no, I'm fairly certain her last words were, "Let them wear fat pants!" You see, our biggest decision for this week's Bread Baker's Apprentice Challenge was what size fat pants we were prepared to dig out of our closet after eating this buttery rich bread. Our mentor and book's author, Peter Reinhart, allows us to choose our own caloric destiny when he presents us with three options for brioche; we could opt for the Rich Man's version with TWO CUPS of butter, the Middle-Class version with ONE CUP of butter, or the Poor Man's Version with a measly HALF CUP of butter. I really, really have a hard time making bread with that much butter, and I kept turning the book's pages hoping for a Homeless Woman-On-A-Diet version with maybe a tablespoon or two of butter involved. No such luck.
So, fat grams be damned, I chose the Middle-Class version and froze all but one of these wicked little gems. I stuck my fat pants in the freezer with them and they can duke it out amongst themselves.
To showcase the richness of this bread (as well as possibly hide some flaws,) I ordered some small paper brioche pans from King Arthur and made petites brioches a tete (look Mom, I'm speaking French!) And in honor of Ms. Antoinette, I offed one of their heads and topped it with a little jam. Cute, oui?
Another fun and interesting bread baking experience. And I feel like I'm becoming so worldly!
