Bacon And Egg Salad

Do you ever just come up empty when you're thinking of what to make to eat? I mean like all of a sudden you've been rendered stupid and haven't the slightest inclination of what to make for dinner?, You've checked the freezer and the pantry (twice) for inspiration. And then, like a deer caught in refrigerator light, you find yourself staring blankly at the shelves and vegetable drawer, unable to move nor come up with a single idea.

That's when you make egg salad. It may not be glamorous, and it might not showcase your splendid culinary skills. But, let's face it. Sometimes it's all about getting back to basics. Sometimes we need to put aside our gourmet vanilla beans and saffron and just get back to our grass roots recipes. The ones that Mom taught us. The ones that are delightfully simple, yet so very tasty... and the best part is, they remind us of home.

Mom.. this one's for you. (Plus, I had leftover bacon that I needed to use. Which still reminds me of you. "Waste not, want not")

We're not sure where she got the hat (she doesn't remember.) We're just going to assume she won it at Bingo... until some other resident steps forward and files a missing hat report. Smackdown at the nursing home. (Film at 11.)

Bacon And Egg Salad

8 eggs, boiled, peeled and coarsely chopped
4 strips turkey bacon, cooked crisp, crumbled
2 Tbsp green onions, green part only, finely chopped
1 stalk celery, finely diced
1/2 cup reduced-fat mayonnaise
2 tsp yellow mustard
1 tsp white vinegar
1 packet Splenda (or a couple of tsps of sugar)
salt and pepper to taste

Combine eggs, bacon, green onions and celery in medium bowl. In a separate small bowl, combine mayo, mustard, vinegar, Splenda, salt and pepper. Combine well then add to ingredients in other bowl. Chill well.
