This week's Bread Baker's Apprentice challenge has taught me that in the future, I shall leave the cracker making to the fine folks at Keebler.
While I didn't think these lavash crackers suffered in esthetics, I found them lacking greatly in taste and texture. Hubby ate one. I ate a half of one. The rest went in the trash.
I didn't have high hopes for this recipe from the start, but I promised myself to not skip another recipe in the book, and in all fairness probably didn't attack this challenge with my usual enthusiasm.
The dough was a breeze to work with and rolled out wonderfully. I decided to cut only one half of the pan into cracker-size pieces and left the other half to snap into shards. I used Mr. Reinhart's suggestions to top the dough: poppy seeds, sesame seeds, cumin seeds, paprika and coarse salt.
After reading the side notes in the book and then realizing that this particular dough can also be used for pita bread, it makes more sense to me now that I merely had a different expectation from this recipe than what was intended. One man's cracker is another gal's flatbread, I suppose.Next week's challenge is light wheat bread and I'm thrilled that we'll finally be using some whole grains!

She makes crackers...she is crackers - nothing fishy there. Ha. Personally, I think they look great - crisp & light. Yum. As for the little elf that made 'em, she's a cutie! I have a question though - how can you just have HALF a cracker? You might really be on to something.

Lacking in taste, huh? They sure do look pretty~ would they taste better if dipped in artichoke dip?
I'm not excited about this recipe either, and kudos to you for making it!
The elf gets a A for effort..remember your readers can't taste your wares (unless we try your receipe and actually go into the kitchen and heat up an oven)
Anon: Thanks for the A! That's some good advice and I realize that no one but me knows how the finished product tastes, but I'd hate to promote a recipe that I didn't like and then have someone make the recipe thinking that it was going to taste fantastic. Just keeping it real!
Frieda: You know what I think my problem was? I just expected it to be more like a cracker. And I think if you like toasted pita pieces, you'd love this dipped in hummus... or artichoke dip.
