Mini Zucchini Banana Bread Loaves

All together now (and if you could sound like my whiny kids, that would be great)... ZUCCHINI AGAAAINN???

Hey, ya gotta make hay while the sun shines, or in this case, you've gotta use up that zucchini before it spoils. My freezer is already filled with baggies of shredded zucchini so these late summer zucchini must be dealt with or die. Besides, I was having a Martha moment if you couldn't tell by the little wrap job I did on these mini zucchini bread loaves.

Actually, I was waxing nostalgic (and now feeling dreadfully geeky for even using that term) because the ribbon I used to tie up these little beauties is the same ribbon I used two years ago in making the favors for my son's wedding. One hundred and thirty CD's were burned by yours truly, then beautified with ribbons and silver hearts and name cards.

My best friend called me nightly that summer, worried about my sanity. She'd ask: "Whatcha doing?" I'd say: "Tie Bow," which she thinks to this day meant that I was exercising and sweating it out with Billy Banks. I Tae'd a lot of Bo back in the summer of '07.

But back to present day and these wonderful little zucchini banana loaves. Here's another shot of one with a blue ribbon because I truly was in Martha mode and was thinking ahead to Christmas gifts and such. Good idea for teachers, mailman, hairdresser, masseuse (who am I kidding,) don't you think?

Want to know what's really special about this recipe? It's whole grain! And no nun would be the wiser, swears. Moist and sweet with banana flavor, you'll love the fact there is only 1/4 cup of oil in these babies. I used Splenda to sweeten them even further, but please feel free to use regular sugar. Or... you could do as I did with the first batch and forget to put sweetener in entirely! The sweetness from the bananas and the chocolate chips actually make this a very nice bread without any additional sweetener at all. How cool is that for all you diabetics and carb counters out there?

This recipe can be made into muffins or a regular full-size loaf. Adjust baking time accordingly.

Mini Zucchini Banana Bread Loaves

Preheat oven to 325 degrees. Spray three mini-loaf pans (5 3/4" X 3" X 2") with cooking spray.

1 cup whole wheat pastry flour
1 cup oat flour
3/4 cup Splenda (or sugar)
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

Whisk above ingredients together in a large mixing bowl.

1 egg
1/2 cup plain yogurt
1/4 cup canola oil
1 cup mashed banana
1 cup shredded zucchini
1/2 tsp vanilla
1/2 tsp banana extract
1/2 -3/4 cup mini chocolate chips (how bad's your chocolate craving?)

Whisk together above ingredients except for chocolate chips. Add wet ingredients to dry ingredients and stir just until thoroughly combined. Do not over mix. Stir in chocolate chips.

Distribute batter between loaf pans. Bake in preheated oven for 40-45 minutes, until toothpick inserted in center comes out clean.

Cool on rack for 10 minutes before removing loaves from pans to cool completely on rack.

Gotta ask what team are the "Bucks"? Oh I am gonna guess Buckeyes?

The CD's WERE a great idea and look gorgeous. The ribbon looks very sweet on your zucchini banana bread, but not half as sweet as I bet they taste. I'm SOOOOO jealous!!!

This looks amazing! I wanted to find a recipe to use up zucchini that was tasty, but also relatively guilt-free. Even though I can't resist the combo of banana and chocolate in this one, it is a winner!

I can't wait to try it tomorrow on my day off! :)
