Cheesy Spaghetti Squash Bake

Yup, it's another "squarsh" recipe folks. Hubby brought home a spaghetti squash that was the size of a watermelon, swears! I only used half of it for this recipe. Know what that means? You haven't heard the last of my squash recipes yet. (I can hear your collective groaning all the way over here in Indiana.)

I roasted this squash in a 425 degree oven until it was completely soft and the strands were easy to scrape from the shell. However, you can also microwave it if you so desire. Pierce the skin of the spaghetti squash several times to allow for the steam to escape. Microwave on high for a total of 20 minutes, rotating after 10 minutes. Let cool for 20 minutes.

Because spaghetti squash can sometimes be watery, I place my cooked squash in a strainer to drain while I put the rest of the recipe together.

Cheesy Spaghetti Squash Bake

1 3-pound spaghetti squash, cooked and seeds removed. Scrape flesh from shell and drain until needed.
4 Italian sausage links (I used turkey Italian sausage)
1 onion, diced
4 garlic cloves, minced
2 bell peppers (any color) seeded, diced
6 oz. mushrooms, roughly chopped
2 TBSP olive oil
salt and pepper
1 can (28 oz) crushed tomatoes
1 tsp oregano
1 tsp basil
pinch of crushed red pepper flakes
8 oz shredded mozzarella cheese
4 oz shredded smoked mozzarella cheese

Preheat oven to 375 degrees.

Slice sausage casings and remove sausage from casing. Brown sausage in a large pot. Remove sausage when browned and drain on paper towel.

Heat olive oil in the same pot and add the onion, bell peppers and mushrooms. Season with salt, pepper, oregano, basil and crushed red pepper flakes. Saute until vegetables have softened and mushrooms have give up most of their liquid. Add garlic and saute for another minute or two. Add the crushed tomatoes, the browned sausage and the spaghetti squash. Stir to combine. Season again with salt and pepper if needed.

Spray a 9X13 baking dish with cooking spray. Spread half of the tomato/squash mixture in the dish. Top with half of the cheeses. Spread the remaining tomato/squash mixture over the cheese and top with the remaining cheese.

Bake in preheated oven for 30-40 minutes or until bubbly and cheese is browned.

My mom made spaghetti squash when I was a child, mostly in the form of spaghetti. I'll have to try it this way. The dish looks delicious!

That looks seriously delicious, although I have to confess I have never baked or cooked with squash... Now how sad it that? I just started using pumpkin this week and don't even know the difference between the two... lol...

Looks very delish Mags and one that I might be able to sneak into the big guy cause there's MEAT in it. Love the addition of the smoked mozz - such a great flavor to that stuff. I'll be trying this PDQ.
