Craisin Oatmeal Cookies (Treats For Co-Irkers)

If you've seen the most recent issue of Taste Of Home magazine, you've most likely already seen a photo of these delicious cookies. Ocean Spray took out a full page ad to promote Craisins and this recipe using them. The photo is so striking that you'll instantly rip the page out of the magazine and head to the store for the ingredients. In fact, when the co-irkers asked hubby what this week's treat was going to be and he started to describe these Craisin oatmeal cookies, the co-irkers knew immediately what he was talking about. They'd also seen that photo in the Taste Of Home magazine and thought the same thing I did. YUM!

While my photos can't compare to that one, I'll put my cookies up against their cookies in the taste department any day. (After all, I used the same recipe they did...LOL!) Think oatmeal, raisin, chocolate chip cookies, then swap out the raisins for Craisins, and the semi-sweet chocolate for white chocolate, and you'll have these delicious oatmeal, cranberry, white chocolate chunk cookies.

I spent a good deal of time earlier this week photographing these cookies as an arrangement, all pretty on a decorative platter. Afterward I packed up the cookies in a freezer container and headed to the computer to download the photos. That's when I noticed a big old grease smear on every single photo. Evidently it's not prudent to be actually eating a cookie at the same time you're handling a camera and photographing them (yeah, I have to live and learn like that.) So the photos you see here are the ones I shot of them earlier on the cooling rack. Aren't you glad I don't charge admission?

Oatmeal Cranberry White Chocolate Chunk Cookies

2/3 cup butter, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
6 ounces Craisins
2/3 cup white chocolate chunks or chips

Preheat oven to 375 degrees. Cream butter and sugar together until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in Craisins and white chocolate chunks. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2-2 1/2 dozen cookies.

Yum!! Cranberry oatmeal cookies with white chocolate chips are my favorite! Try adding some cinnamon and nutmeg to the batter - delish! :)

Makes 2 to 2 1/2 dozen cookies? Ya think the big guy'd believe it only made a dozen? LOL I think your photo's plum purdy and boy did I laugh about the grease spot on the camera. BTDT

The fact that your hubby forgot the cookies but turned around (even after he was already at work)and went back for them redeems him in my eyes for whatever transgressions he may have had in the past.

Now I can honestly say these are some very fine cookies. I was able to taste them through my yucky head cold. So good I wish I had more (next time no more miss nice girl - I'm gonna take two).
