Getting It Out Of My System...

Please raise your hand if you're one of those people who feels it's imperative to gain an extra five pounds before you start your "big" diet. Each time I plan for that diet to end all diets, the one that's going to get me thin and keep me thin forever, the diet-for-the-rest-of-my-life diet, I spend the preceding weeks eating all those things that I'll never be able to eat again, or at least not for a long time.

This practice always leads me to gaining extra weight before even starting the diet, of course. And then when I actually start the diet, I typically last long enough to lose the weight I gained before starting the diet, leaving me right at the same weight I was before I even thought of dieting. *sigh* *sigh again*

Macaroni and cheese is one of those foods that has no place in the diet world. Oh I know, you can sub in whole wheat pasta, skim milk and low fat cheese, but let's face it, what you were really craving in the first place is the ridiculously rich and fat-laden version and no trimmed down recipe is going to satisfy your longing for the original.

So I'm just getting it out of my system before January 1st. Rich and creamy with an added kick from Ro-tels (diced tomatoes and green chilies) this delicious version of mac & cheese is one of my favorites. Please feel free to try it if you also have the need to gain a pound or two before the new year. Or, you could skip this and come back in January when I'll be featuring a month's worth of figure-friendly recipes. (I promise.)

Queso Macaroni & Cheese

8 oz macaroni, boiled per package directions, drained
7 TBSP butter, divided
4 TBSP flour
1/2 tsp salt
2 1/2 cups whole milk
8 oz Velveeta, cubed
4 oz shredded cheddar cheese
4 oz shredded monterey jack cheese
1 10 oz can Ro-tels, drained
1 1/2 cups bread crumbs

Preheat oven to 350 degrees. Spray casserole dish with cooking spray.

In large sauce pan melt 4 TBSP of butter. Sprinkle the flour over the butter and cook, stirring constantly for 2-3 minutes. Gradually whisk in the milk and bring to a bubble, stirring until smooth. Season with salt and pepper and remove from heat. Gradually add in the cheeses and stir to melt and combine. Add cooked macaroni and stir to combine. Add drained Ro-tels and stir. Pour all into prepared casserole dish.

Melt remaining 3 TBSP of butter in the microwave for 30 seconds to 1 minute. Combine with the bread crumbs and stir well. Sprinkle bread crumbs over macaroni and cheese.

Bake for 30 minutes or until bubbly and browned.

Seriously? This is my 2 fave foods in 1 bowl! Queso! Mac and cheese! But since I'm always trying to lose a few, I'll lighten it by omitting the breadcrumbs. (LOL! like that's gonna happen! Maybe if I don't look at them, they won't count!)

Ha,ha good one Mags. Proof again that we march to the same drum! I'm the one that got an elliptical and promptly gained 5 pounds the first week I was using it. Lord have mercy. I'll be trying your mac & cheese recipe before January 1 for sure.

LOL see this is why I don't go on diets or give anything up!! It all leads to craziness for me! I just say eat it all but don't go crazy :) yum!

It's easy to make 'diet' mac & cheese... simply leave out the calories ;) This looks good... I love Ro-Tel tomatoes and I'm sure it adds a special kick to this dish.
