World Peace Cookies

How about some world peace for Christmas? Sound like a great idea? Well, since that's about as probable as me fitting into a size 6 cocktail dress, how about we just make some world peace cookies, pray for world peace and dream about me being a size 6.

I'm not a member of the Tuesdays With Dorie baking group, but I follow the blogs of many of the members. When they made these cookies last February, I bookmarked the recipe and decided it would be a great cookie to include on my holiday cookie trays. Dorie Greenspan includes this recipe in her book, Baking: From My Home to Yours, and tells the story of how this cookie got its name. Evidently Dorie's neighbor was convinced that a daily dose of the cookies is all that would be needed to ensure planetary peace and happiness, and thus dubbed them World Peace Cookies. Ahh... how wonderful if it could be so simple.

Even if planetary peace is not probable in the near future, I promise that your taste buds will experience bliss with every bite of these little chocolate delights.

World Peace Cookies (adapted from Dorie Greenspan's Baking: From My Home to Yours)

1 1/4 cups all-purpose flour
1/3 cup Dutch-processed cocoa powder
1/2 teaspoon baking soda
1 stick plus 3 tablespoons (11 tablespoons) unsalted butter, at room temperature
2/3 cup (packed) light brown sugar
1/4 cup sugar
1/2 teaspoon fleur de sel or 1/4 teaspoon fine sea salt
1 teaspoon vanilla extract
5 ounces bittersweet chocolate, chopped into chips, or a generous 3/4 cup store-bought mini chocolate chips

Sift together the flour, cocoa and baking soda.

With a stand mixer fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed until soft and creamy. Add both sugars, the salt and vanilla extract and beat for 2 minutes more.

Add the four/cocoa/baking soda. Turn on mixer to lowest setting and pulse a few times to start to incorporate flour. Gradually increase speed and mix just until flour is completely combined. Do not over mix. The dough will be quite crumbly. Add chocolate pieces and mix a few more seconds to disperse throughout dough.

Turn the dough out onto a work surface, gather it together and divide it in half. Working with one half at a time, shape the dough into logs that are 1 1/2 inches in diameter. Wrap the logs in plastic wrap and refrigerate them for at least one hour.

Preheat oven to 325 degrees. Line baking sheets with parchment or silicone mats.

Slice the logs into rounds that are 1/2 inch thick. Place the rounds on the baking sheets, leaving about 1 inch between them.

Bake the cookies one sheet at a time for 12 minutes. Remove from oven and allow to cool for a few minutes on baking sheet before removing them to a cooling rack.

Yield: About three dozen cookies.

I don't have anyone to bake cookies or any other dessert for these days. Hubby has to have everything with some kind of sugar substitute & the kids think fructose is a cardinal sin.

What happened to the good old days?

Snooty: bake and give away.... that's what I do. Somewhere out there are people with low blood sugar and low cholesterol who will eat up the this stuff.

great pics mags!! I think you could fit into a size 6, just go to the right store! I swear clothing sizes are so out of whack at some stores. I tried on pants at a store the other day... my bum is normally a 6 or 8... no joke I had a 2 on and it was too big!?!?! what??? I know they are trying to make us all feel smaller... but this is just ridiculous!!

Hey Mags - I know someone with high cholesterol and high blood sugar who'd pass for the Cookie Monster's twin bro and fight over these. Hey they're both big guys but one is only green if he's had too many martinis - LOL

I made these recently too and my entire family loved them! I'm not sure things were more peaceful at my house, but they are a fabulous cookie!

Meh - size 6's are overrated. I'm sure you can find a lovely dress and look fabulous in whatever size you are!
I made these cookies a few months back and was kinda disappointed in them. Thought they kinda looked like dirt (then again, I may have poisoned my mind by comparing the cookie dough to a pile of horse manueur. Come totally looks like it:)
