Grapefruit, Avocado and Pomegranate Spinach Salad

I debated on whether I should even post this recipe. While I love all the ingredients individually, their marriage in this salad left me a little underwhelmed. However, just as there are those people who think that cilantro is edible, there must be at least one or two people out there who might enjoy the combination of grapefruit and spinach. As for me, I'm chalking this one up to "it all looked good on paper."

Grapefruit, Avocado and Pomegranate Spinach Salad (6 servings)

1 ripe avocado, peeled and cut into 1/4" slices
6 ounces baby spinach
1 ruby red grapefruit, peeled and sectioned
2 TBSP sugar (I used Splenda)
1 1/2 TBSP raspberry vinegar
1/4 tsp dry mustard
1/8 tsp salt
1 TBSP canola oil
1 tsp poppy seeds
1 TBSP sunflower seed kernels
1/2 cup pomegranate seeds

Combine sugar, vinegar, mustard, salt and poppy seeds in a small bowl. Whisk until sugar dissolves. Gradually add oil, whisking until incorporated. Arrange spinach on a salad plate and top with avocado and grapefruit slices. Drizzle with dressing and garnish with sunflower and pomegranate seeds.

Mags, I think it looks wonderful but I'm sorry you were "underwhelmed". Maybe orange instead of grapefruit?

That salad looks lovely! This would be a hit at my house! I love to add grapefruit and oranges to salads. Infact, I just got some juicy ruby red grapefruits at the market yesterday. Hmmm...

Looks good to me but I know what yo mean when you say looks good on paper. I say that about clothes a lot....Looks good on hanger!!!!!

Mags, it does look delicious! But maybe it needs a sweet dressing to bring it together. Something like a Poppyseed Honey dressing...

Sorry you weren't thrilled with this one. I must admit that most salads leave me underwhelmed (thus the reason I could stand to lose a few pounds!) Perhaps try some mango instead of the grapefruit?

This looks good to me. I love all the ingredients - maybe the flavors would be better if the grapefruit and avocado were cut into smaller pieces and tossed with the spinach - ?

Looks gorgeous! I do love grapefruit or other citrus fruit on a spinach salad, and I agree with the suggestion about some honey in the dressing to add a touch of sweetness. Though I have never put a sweet dressing on avacado so I don't know. Hmm. Makes a lovely pic though all your pictures are lovely. I have serious food-blog-pic envy.

I know it is heresy to say, but it is the avocado I would avoid... just never got a taste for it

I like spinach salad and this one looks good but....can I put the grapefruit and pomegranite thingys in some yogurt and have that on the side?

June: Yes, I think oranges would have worked much better in this recipe. It just needed more sweetness.

George: I think a honey poppyseed dressing would have definitely made this more palatable.

Steph: Yup, this was a weird combination but I thought it just might work. Back to the drawing board...LOL

Jen: Yes, mango might also have been a great substitution!

Karen: That might have worked but I still think the grapefruit was just too strong of a flavor to be included at all.

A Year: I know avocado is one of those things that people either love or hate (sorta kinda like brussels sprouts, eh?)
