Cheesy Pepperoni Bites

It would appear that when the cat's away, the mouse of the house feels like she doesn't have to cook regular meals and can subsist on appetizers. I've eaten my way through most of the chicken deviled eggs and several (which is more than two but less than a dozen) of the bagel bites I made this week and today's cheesy pepperoni bites are sitting on the counter staring at me. Hubby, please come back home. I need you to eat some of this stuff so I can get back to making regular food. However, don't come back until you've won some sort of jackpot. (Can you guess where he is?)

This recipe comes from King Arthur Flour, which explains why there are so many King Arthur Flour ingredients in it. I'm a huge fan of their products and use only King Arthur flours. I wait for a sale of some sort or order when they offer free shipping and little by little I've accumulated many of their specialty items, like the Vermont cheese powder, pizza seasoning, and pizza dough flavor. I have a feeling that these biscuits would be very tasty without the addition of these products, but since I have them, I used them. I also desperately want the individual pop-up tart pan that they show with this recipe, but it is no longer available. What I do have however, are two mini-cheesecake pans and that is what I used for these little bites. They can also be made as drop biscuits on a baking sheet.

Cheesy Pepperoni Bites (adapted from King Arthur Flour)

1 1/2 cups unbleached all-purpose flour
1/4 cup Vermont sharp cheddar cheese powder
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp pizza dough flavor
1 tsp pizza seasoning (plus 1/2 tsp to sprinkle on top of biscuits)
4 TBSP unsalted butter, cut into small pieces
1/2 cup (1 3/4 ounces) pepperoni (turkey pepperoni is fine)
1 cup shredded sharp cheddar cheese
1/4 cup green onions, optional
3/4 cup milk

Preheat oven to 425 degrees. Lightly spray two mini-cheesecake pans with cooking spray or spray baking sheet with cooking spray if you're going to be making drop biscuits. If using the mini-cheesecake pans place them on a baking sheet.

Place the green onions in a food processor and process until finely diced. Add the pepperoni slices and process until they are in small uniform pieces.

In a mixing bowl whisk together the flour, cheddar cheese powder, baking powder, salt, pizza dough flavor and pizza seasoning. Add the butter pieces and using your hands, work it into the flour until the mixture is crumbly.

Add the pepperoni, green onions and shredded cheese, mixing to distribute. Add the milk and mix just until everything is evenly moistened.

If using the mini-cheesecake pans, place one level tablespoon of dough into each of the wells. If making drop biscuits drop dough by heaping tablespoons onto prepared baking sheet.

Sprinkle the biscuits with the reserved pizza seasoning. Place in oven and bake until they're a medium to deep golden brown, 10-14 minutes.

Remove from oven and let cool for a minute on cooling rack. Remove biscuits from pan. Serve warm.

This yields 16 larger biscuits or 24 smaller appetizer-size biscuits.

I do the same thing if my gardener goes out of town - I hardly ever make a "real" meal. By the time he gets back I'm craving real food! These look really good - I could eat a dozen :)

I eat exactly the way you do when my husband is out of town: savory bits of this and that, never amounting to a real meal, whatever strikes my fancy. And these pepperoni bites suit me to a tee. Love them! Perhaps I could convince my husband to take a two-day trip next week:)
