Cream Cheese Cranberry Muffins (Treats For Co-Irkers)

These tasty little treats for the co-irkers were supposed to be posted last Friday, but I ran out of time! Please don't think I'm lazy. I work my tail off from the time I get up in the morning until the time I take my first nap.

I always get a little excited when I see the fresh cranberries appear in the store at this time of year and I usually snatch up more than I need, but it's always so nice to look in the freezer come February or March and see that I still have a stash to bake with.

Cream Cheese Cranberry Muffins (from Taste of Home Magazine)

1 cup butter, softened
1 (8 oz) package of cream cheese, softened
1 1/2 cups sugar
1 1/2 tsp vanilla
4 large eggs
2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 cups fresh or frozen cranberries
1/2 cup chopped pecans

Preheat oven to 350 degrees. Line 24 baking cups with papers and spray lightly with cooking spray.

In a large mixing bowl, cream the butter, cream cheese, sugar and vanilla. Add eggs, one at a time, and beat well after each addition. In a separate bowl, whisk together the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and mix until moistened. Do not over mix. Fold in the cranberries and pecans.

Fill muffin cups three-fourths full. Bake at 350 degrees for 20-25 minutes. Cool pans on cooling rack for 5 minutes before removing muffins from pan to cool completely on rack.

I'm all about fresh cranberries this time of year and never manage to eat my fill of them before the short season is over (or buy and freeze enough bags of them for later use). You've put ALL of the good stuff in these dreamy muffins, Mags, and I'm putting them at the top of my must-make list!

These sound awesome! Fresh cranberries make me happy too. Yes, I know it's strange but something about those little ruby like beauties glistening in a tub of water is just beautiful.

One of my favorite bars are cranberry cream cheese bars around he holiday season. These muffins sound SO good!

Mmmm, Mags. They look divine! Like you I hoard cranberries in my freezer as soon as I seem them in the fall. Currently I have about 4 bags so I'm always on the look out for new uses for them. :)

I always snap up bags and bags of cranberries in the fall too! These muffins are gorgeous. Funny, I just came across a similar recipe and was thinking about how I might make it low carb for me. Maybe I will use your recipe as my basic guide...

I love fruit in my baked goods and cranberries are one of the top of the fruit list. Their tartness breaks up anything thing, enabling me to eat twice as much. There's something wrong with that statement, but I'm not going to pick it apart. Let's just say that your muffins look incredibly wonderful. Lucky co-irkers.

These look really yummy. :) The other day I was listening to NPR and they had a program about all of the health benefits of eating cranberries. I could get very healthy by eating a few of these I'm sure!

I was almost heartbroken on Friday when I saw there was no entry for us.

Then your hubs burst in with these little darlings. Oh my.

Cream cheese and cranberries - you can't go wrong. And you certainly didn't.

The sweetness of the muffin was perfectly balanced with the tartness of the cranberries. Plus I felt no guilt eating it right away. After all muffins are a breakfast food.
