I've had this tortilla roll-up tree on my list of things to make for the past two Christmases, but it kept getting put on the back burner due to other recipes, time constraints, etc. When hubby came home from work and gave me short notice on a Christmas potluck this week however, I knew I had all the ingredients for this and decided to see if I could make it work. I have no idea how it actually looked when it was unwrapped from its thousand of layers of plastic wrap, but I thought it looked rather festive when I was actually photographing it.I'll give you the dip recipe I used to spread on the tortillas but feel free to use your own favorite roll-up combination. The tortillas I used were Mission Garden Spinach Herb and I chose to use spinach leaves between the layers (because I had them,) but you could use curly parsley or even romaine lettuce leaves. A finely chopped roasted red pepper from a jar adds a touch of holiday red, and a piece of yellow pepper cut into a star adorns the top of the tree. The entire project from the start of making the dip to finishing the tree took me less than an hour. However, on a side note to the co-irkers, please bypass hubby and start sending the emails directly to me for future events. It keeps him out of the doghouse, if you know what I mean.
Judy's Cheese Spread (This also makes a fantastic cracker dip)
2 (8-oz) packages of light cream cheese, room temperature
2 (3-oz) packages dried beef, finely diced (I do mine in the food processor)
1 (5 oz) jar of Kraft pimento cheese spread
1 (5 oz) jar of Kraft Old English cheese spread
1 tsp garlic powder
1 tsp Worcestershire sauce
Combine all of the above and mix thoroughly.

Wow Mags, this is really impressive (and delicious I'll bet). As for hubby in the dog house, he has plenty of company. Mine turned off the oven last night when he was "helping" in the kitchen. Uhhh - there was still 1 plus hours left for the lamb to cook. He's also pulled the same potluck stunt too. Men..can't live with 'em, can't live without 'em. LOL
This is perfect for any Christmas celebration. I wish I had seen this before I decided on my appetizer to take for Christmas Eve. Everyone loves roll ups, this is so perfect.
I would love to see an after picture, though...wonder what it looked like when hubs got it to work. :)

I made this and it turned out great. In fact, some of the ladies took pics with their cellphones!!!
I used a filling that had cream cheese, feta cheese, and dried cranberries, and so never used the red pepper as the cranberries did the same job and tied in with the XMAS theme.

Ah! Ha!!! What a fabulous, fun and festive appetizer for Christmas Eve. My family has switched from the traditional turkey to lots of appetizers. Much as I hate breaking with tradition, this will make for a happy smile on lots of little faces. And a delicious, nutritious and filling food.
